Space Shuttle Launch
There's no way to capture this properly from so far away - but this is the space shuttle going up on July 15! It took off just after 6pm. I'm on the opposite coast of FL.....but we are able to see some launches - but usually only night ones. I recalled the flight path from the last night launch so at least I had an idea of where to look in the sky. It took me a few seconds, but finally spotted it as it darted in and out of the clouds. Very cool!

My Favorite Lunch
The best thing you can do if you want to eat healthy? Preheat oven to 350 degrees. Take a package of chicken breasts, remove the tenderloins (and save if you'd like), and place in a small sheet pan. I give each breast a good swipe of extra virgin olive oil, salt, pepper, onion powder, plus a special seasoning I buy at Whole Foods called Borsari.
Cook the chicken for 30-35 minutes. Let cool completely, then store in the fridge.
I cut up a vine-ripened tomato into small pieces, then add some extra virgin olive oil, salt and pepper in a small bowl. Let sit for a little while. If you have access to fresh basil -grab a few leaves, roll up into a chiffonade, a slice with a good knife.
Slice the chicken. To a plate add several handfuls of organic greens, the chicken, sliced avocado, sliced fresh mozzarella, and then the tomato/olive oil mixture and combine well. Sprinkle the chiffonade of basil over all. Yum!
TIP: Baking the chicken breasts instead of poaching them helps to keep them from drying out.
